Article: Cooking: Making a pizza

This is my first in a series of me preparing meals, so you can enjoy them as I do. A handy guide with images of what's happening. Although, I apologise in advance for the terrible image quality.

In this first piece, we are going to make a pizza. Our topping will be mozzarella, general tomato sauce and pepperoni (sausages; salami). Of course, beyond mozzarella and tomato sauce, you are likely to pick some other topping of your own. Feel free to experiment.

I strongly encourage you to read the entire recipe before beginning. There are some important notes I relay as we move along.

The dough

The main event in this recipe is the dough.

The exact numbers came from my brother, who makes an excellent pizza, but his oven is also more capable than mine.

Since the image above is in Danish, let me translate the ingredients for the dough:

  • 270g flour (though, ensure the flour has 11g or more protein per 100g)
  • 130g durum flour
  • 5g yeast
  • 2tsp salt
  • 300dl water
  • 1sp oil

First, mix the yeast with water, until it is dissolved.

My kitchen has this awesome scale that hangs from the wall, allowing it to always be nearby but never in the way. Unfortunately, the scale is off by 40g, as you might be able to tell from this picture.

Then, apply the flour to the water, then the salt and oil. Then mix it until it is a dough.

The dough should be finished rather quickly.

Now wait at least 1 hour and 20 minutes for the dough to rise, although 1 and half hour is an optimal suggestion.

While the dough rises, it is a good idea to turn on the oven. Particularly if your oven is as terrible as mine. Set the oven for 300 degrees Celsius. Make sure that you leave the plate inside the oven while it is heating up, so the plate itself is hot.

Unfortunately, my oven can only go to 250 degrees, so that will have to do.

When the time has passed, split the dough in two pieces (we are going to make two pizzas), and let them rest for 10 minutes.

Try your best to make the dough get a pizza-like shape, although it never really happens successfully.

You are now ready to apply the toppings.
